It all starts more than 6 decades earlier, in the wider area of Psachna, Evia, in a fertile, sunny area near the sea, where the dozens of olive trees operated by the Gounaras family eagerly await autumn to bear crop.

These trees are a mix of the popular Manaki variety, as well as Throumbolia, which is the oldest olive variety in Greece. The use of part of the crops of Throumbolia for the preparation of olive oil is only one of the many innovations of the Gounaras family, which have been proven to contribute to the excellent result produced.

From the first watering decades earlier, to the last, most recent harvest, the organic approach to the cultivation of olive trees is a non-negotiable term. By exploiting the properties of natural rocks, as well as by using approved organic fertilizers, the environmental footprint of the crop is annihilated. After all, a harmonious relationship with the environment is the cornerstone for a harmonious healthy life.

When the top raw material is secured, the processes are in order. The olive crops are harvested by hand. Not by artificial means that can harm the tree or its crops. They are pressed on the same day, without any delay. With the kneading process occurring in cold conditions and without chemical or heat treatments intervening, the olive oil is introduced into containers labeled “8:26 Histories – Charilaos Gounaras”. Thus, it is going to be confirmed very soon that there is a class in olive oil superior to the excellent one.
